You’ve just opened your bakery a few months ago. What has surprised you most about running your own space so far?
Before opening a physical bakery, Handy Bakery had actually been around for about two and a half years, selling to coffee shops. In the beginning, everything was new for me — from choosing a name to testing recipes and doing all the shopping. Being free in the kitchen is something I couldn’t do when working for others, and that has been a really nice “surprise.” But since opening the physical shop, I’ve been especially surprised by how warmly the neighbors have received us. It feels like the bakery was something the neighborhood really needed. The warm welcome has been amazing, and I feel very grateful.
We wanted to create a warm, welcoming space, so Handy feels cozy and close to the people.
What’s your personal favorite pastry on the menu; the one you always sneak a bite of when no one’s looking?
I love the carrot cake with figs that we have in the shop. But also, the dough for the peanut cookies. Defne and I tried it raw (because it’s vegan), and we immediately knew we had to do something with it. Now it’s one of our best sellers.
How would you describe the atmosphere you wanted to create inside your bakery and how does design play a role in that?
We decided to represent duality: how you can be feminine and masculine at the same time, and how nice that is! Just look at Dennis Rodman! That’s why the shop feels so elegant, while the kitchen is more industrial. We also wanted to create a warm, welcoming space. We were tired of places that look like labs or feel intimidating from the outside because they seem “too expensive.” We wanted Handy to feel cozy and close to the people.
You chose ÅOOMI cups quite early on — what drew you to them, and how do they fit into your vision for the space?
The first time I used the ÅOOMI cups, I loved the feel of them — the touch is so good! The colors are beautiful, too. And now, after using them for some time, I can say I’d definitely buy them again for a second shop, because they are very, very, very resistant.
Looking ahead, what are your hopes for your bakery’s next chapter — any dreams you’re already shaping for the future?
Inside the kitchen, I want to keep building a safe space — one where our bakers are free to experiment and be creative, where we break old patterns and grow together in a respectful environment. I want women to have a bigger role in the kitchen, combining hard work, artisanal methods, fermented products, good ingredients, and good music.
Maybe another Handy soon could be a dream we’ve already started imagining. For our customers, I want to maintain the same quality in both products and service that we have now — consistency is very hard to find. And maybe not too far from now, we can start hosting events inside the bakery: creating community, making space for art and small projects, and having a bigger space to share.
I want women to have a bigger role in the kitchen.
